Ingredients
- 1/2 cup mayonnaise
- 1/4 cup minced onion
- 1 tablespoon Dijon mustard
- 1 cup Italian seasoned bread crumbs
- 1/4 cup grated Parmesan cheese
- 4 cups assorted vegetables (broccoli, cauliflower, mushrooms, zucchini, etc.)
- parchment paper sprayed with a little nonstick cooking spray
How To Make oven-baked crunchy breaded vegetables

Step 1Line a baking sheet with parchment paper and spray lightly with cooking spray. Preheat the oven to 425 degrees F.

Step 2In a large bowl, combine the mayo, onion, and Dijon mustard. Combine well.

Step 3Add all veggies to this mixture and toss to coat.

Step 4In a large plastic baggie, combine the bread crumbs and Parmesan. Shake to combine.

Step 5Add the vegetables to the breading mixture.

Step 6Then place the vegetables in a single layer on the baking sheet. Bake vegetables for 10 minutes or until tender and golden brown.
