Ingredients

  • 1/2 cup mayonnaise
  • 1/4 cup minced onion
  • 1 tablespoon Dijon mustard
  • 1 cup Italian seasoned bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 4 cups assorted vegetables (broccoli, cauliflower, mushrooms, zucchini, etc.)
  • parchment paper sprayed with a little nonstick cooking spray

How To Make oven-baked crunchy breaded vegetables

  • Step 1
    Line a baking sheet with parchment paper and spray lightly with cooking spray. Preheat the oven to 425 degrees F.
  • Step 2
    In a large bowl, combine the mayo, onion, and Dijon mustard. Combine well.
  • Step 3
    Add all veggies to this mixture and toss to coat.
  • Step 4
    In a large plastic baggie, combine the bread crumbs and Parmesan. Shake to combine.
  • Step 5
    Add the vegetables to the breading mixture.
  • Step 6
    Then place the vegetables in a single layer on the baking sheet. Bake vegetables for 10 minutes or until tender and golden brown.
