I found this recipe in an old recipe box that I had tucked away. It had been clipped from a newspaper many years ago. Make it ahead of time. The longer it sets, the better it becomes. It can be easily doubled.

Ingredients

  • 2 medium cucumbers, peeled and thin sliced
  • 1/2 cup rice vinegar
  • 4 tablespoons sugar (more or less to taste)
  • 1 teaspoon salt
  • - ginger root, 4-5 thin slices

How To Make oriental cucumbers

  • Step 1
Place sliced cucumbers in a medium bowl. (If you have a larger cucumber, you may want to slice it in half lengthwise and remove the seeds, then slice thin)
  • Step 2
Mix together rice vinegar, sugar, salt and ginger root. Pour over sliced cucumbers.
  • Step 3
Note: Depending on the size of the cucumbers, you may have to increase the amount of dressing.
  • Step 4
Refrigerate at least 1 hour - longer is better - stir occasionally.
