oriental cucumbers
I found this recipe in an old recipe box that I had tucked away. It had been clipped from a newspaper many years ago. Make it ahead of time. The longer it sets, the better it becomes. It can be easily doubled.

Ingredients
- 2 medium cucumbers, peeled and thin sliced
- 1/2 cup rice vinegar
- 4 tablespoons sugar (more or less to taste)
- 1 teaspoon salt
- - ginger root, 4-5 thin slices
How To Make oriental cucumbers

Step 1Place sliced cucumbers in a medium bowl. (If you have a larger cucumber, you may want to slice it in half lengthwise and remove the seeds, then slice thin)

Step 2Mix together rice vinegar, sugar, salt and ginger root. Pour over sliced cucumbers.

Step 3Note: Depending on the size of the cucumbers, you may have to increase the amount of dressing.

Step 4Refrigerate at least 1 hour - longer is better - stir occasionally.
