orange-glazed beets
We'd been getting a lot of beets from our CSA, so I came up with a simple way to prepare them that was surprisingly tasty! I really think the ghee makes a difference in the flavor if you can get it.

Ingredients
- 10 medium beets, trimmed
- 2 tablespoons ghee or butter
- 1 cup orange juice, fresh
- 1 cup water, cold
- - salt to taste

Step 1Cut the beets into quarters

Step 2Put all ingredients in saucepan and bring to gentle boil. Continue cooking until sauce has reduced to a glaze and beets are tender--about 15-20 minutes.
