We'd been getting a lot of beets from our CSA, so I came up with a simple way to prepare them that was surprisingly tasty! I really think the ghee makes a difference in the flavor if you can get it.

Ingredients

10 medium beets, trimmed
2 tablespoons ghee or butter
1 cup orange juice, fresh
1 cup water, cold
- salt to taste

How To Make orange-glazed beets

Step 1

Cut the beets into quarters

Step 2

Put all ingredients in saucepan and bring to gentle boil. Continue cooking until sauce has reduced to a glaze and beets are tender--about 15-20 minutes.
