orange basil butter carrots
This was my husband’s creation for part of a special dinner just the two of us. It is amazing!

Ingredients
- 2-3 large carrots
- 7 clementine oranges
- 1/2 tablespoon basil, dried
- 2 1/2 tablespoons butter, divided
- 1/2 small onion, diced small
- 1/2 teaspoon sugar
- 1/2 teaspoon brown sugar
How To Make orange basil butter carrots

Step 1First, with the Clementines, zest 1, juice 2 & peel & segment the remaining 4.

Step 2Cut carrots into matchsticks, then add to a small pot of salted boiling water & cook until just tender.

Step 3In a separate pan, sauté the onions in 1 Tablespoon of the butter until tender, then add the brown sugar. Cook until heated through & sugar coats the onions.

Step 4Drain the carrots in a colander, then return to pot over a low heat until the carrots dry up a bit to absorb the butter & sugars better.

Step 5Add the sweetened onions. Stir. Add the remaining butter & segmented Clementines.

Step 6Add the juice, zest & basil. Heat through.
