onions with bacon and cheese dome
A recipe I am posting for the Switzerland leg of the Culinary Quest. This is called Zwiebeln mit Speck-Käse-Haube, but this wouldn't fit along with the English translation in the title.

Ingredients
- - 400 g (14 oz) onions
- - 1 tbsp oil
- - salt and pepper to taste
- - 150 g(5 1/2 oz) lean bacon in thin slices
- - 300 g(11 oz) alpine cheese, raclette cheese or emmentaler
- - 50 g(2 oz) sour cream
How To Make onions with bacon and cheese dome

Step 1Peel the onions and cut into thin rings. Heat the oil in a pan, saute onions over low heat for about 10 minutes. Braise. Stir frequently to prevent over browning.

Step 2Season the onions with salt and pepper. Cut the bacon into thin strips or cubes and lightly brown in same pan, then drain on paper towels. Free the cheese from the bark and also cut into cubes. Mix bacon and cheese with sour cream.

Step 3Heat up raclette grill or the stove/oven. Distribute a the onion rings in the pan, cover with bacon-cheese mixture. Place under raclette grill or broiler/oven and cook, until the cheese has melted and lightly browned.
