I love onion rings, but never made them. I was experimenting the other day and just couldn't get the stuff to stick to the onions well enough, so I decided to go another route and chopped the onion up. Turned out well, and got two thumbs up from my husband.

Ingredients For onion ring wannabe's

  • 1
    large sweet onion (can use two medium if you are wanting more onion and less batter)
  • 1 box
    jiffy corn muffin mix
  • 1/2 c
    milk
  • 2
    eggs
  • 1 Tbsp
    sugar
  • 1 tsp
    kosher salt

How To Make onion ring wannabe's

    Heat about 1/2 inch oil in skillet (don't overheat or will burn quickly)
  • 2
    While oil is heating, chop up onion into large pieces, but seperate the layers.
  • 3
    Combine the remaining ingredients and mix completely.

    Stir in the chopped onion.
  • 5
    Drop into hot oil (I dropped about 1/3 c of batter per) and brown, then flip and brown the other side.
