I love onion rings, but never made them. I was experimenting the other day and just couldn't get the stuff to stick to the onions well enough, so I decided to go another route and chopped the onion up. Turned out well, and got two thumbs up from my husband.

Ingredients

  • 1
    large sweet onion (can use two medium if you are wanting more onion and less batter)
  • 1 box
    jiffy corn muffin mix
  • 1/2 c
    milk
  • 2
    eggs
  • 1 Tbsp
    sugar
  • 1 tsp
    kosher salt

How to Make Onion Ring Wannabe's

Step-by-Step

  1. Heat about 1/2 inch oil in skillet (don't overheat or will burn quickly)
  2. While oil is heating, chop up onion into large pieces, but seperate the layers.
  3. Combine the remaining ingredients and mix completely.
  4. Stir in the chopped onion.
  5. Drop into hot oil (I dropped about 1/3 c of batter per) and brown, then flip and brown the other side.
