onion ring wannabe's
I love onion rings, but never made them. I was experimenting the other day and just couldn't get the stuff to stick to the onions well enough, so I decided to go another route and chopped the onion up. Turned out well, and got two thumbs up from my husband.

Makes about 15 (more or less)
Ingredients
- 1 - large sweet onion (can use two medium if you are wanting more onion and less batter)
- 1 box jiffy corn muffin mix
- 1/2 cup milk
- 2 - eggs
- 1 tablespoon sugar
- 1 teaspoon kosher salt
How To Make onion ring wannabe's

Step 1Heat about 1/2 inch oil in skillet (don't overheat or will burn quickly)

Step 2While oil is heating, chop up onion into large pieces, but seperate the layers.

Step 3Combine the remaining ingredients and mix completely.

Step 4Stir in the chopped onion.

Step 5Drop into hot oil (I dropped about 1/3 c of batter per) and brown, then flip and brown the other side.
