I have never made thee but my step- dad came from the mountains in Virginia & said his mother always made this.

Ingredients

  • 3 1/2 pounds small okra pods
  • 7 cloves garlic
  • 7 small hot peppers
  • 1 quart water
  • 2 cups white vinegar (5% acidity)
  • 1/3 cup pickling salt
  • 2 teaspoons dill seeds

How To Make okra pickles

  • Step 1
    Pack okra tightly into hot jars, filling to 1/2 inch from top; place a garlic clove & hot pepper in each.
  • Step 2
    Combine water & remaining 3 ingredients in a saucepan; bring to a boil.
  • Step 3
    Pour boiling vinegar mixture over okra, filling to 1/2 inch from top. Remove air bubbles, wipe jar rims.
  • Step 4
    Cover at once with medal lids, & screw on bands. Process in boiling water bath for 10 minutes.
