I have never made thee but my step- dad came from the mountains in Virginia & said his mother always made this.

Ingredients

  • 3 1/2 lb
    small okra pods
  • 7 clove
    garlic
  • 7 small
    hot peppers
  • 1 qt
    water
  • 2 c
    white vinegar (5% acidity)
  • 1/3 c
    pickling salt
  • 2 tsp
    dill seeds

How to Make OKRA PICKLES

Step-by-Step

  1. Pack okra tightly into hot jars, filling to 1/2 inch from top; place a garlic clove & hot pepper in each.
  2. Combine water & remaining 3 ingredients in a saucepan; bring to a boil.
  3. Pour boiling vinegar mixture over okra, filling to 1/2 inch from top. Remove air bubbles, wipe jar rims.
  4. Cover at once with medal lids, & screw on bands. Process in boiling water bath for 10 minutes.
