This is the time of year I always have an abundance of okra in the garden, so I'm always looking for new and different ideas on how to use it. This is very good and makes a wonderful side dish to any meal.

How to Make Okra Patties

Step-by-Step

  1. Wash okra, drain and slice. Slice the okra a little thinner then you would if you were just frying the okra.
  2. In large mixing bowl, mix salt, baking power, cornmeal, flour and egg. Add water and mix well. Stir in okra.
  3. Drop by spoonfuls into small amount of hot oil in skillet and fry as you would a pancake, turning to brown each side. Each side takes about 10 minutes over medium heat.
