How to Make Okra Patties
- Wash okra, drain and slice. Slice the okra a little thinner then you would if you were just frying the okra.
- In large mixing bowl, mix salt, baking power, cornmeal, flour and egg. Add water and mix well. Stir in okra.
- Drop by spoonfuls into small amount of hot oil in skillet and fry as you would a pancake, turning to brown each side. Each side takes about 10 minutes over medium heat.
