Ingredients

  • 2 acorn squash
  • 1 large egg
  • 1/4 cup brown sugar
  • 8 tablespoons butter, melted
  • 1 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup chopped pecans
  • 1/4 cup golden raisins
  • 1/4 cup dark raisins
  • 1/4 cup oatmeal
  • salt
  • 1/4 cup olive oil
  • 1/4 cup honey

How To Make oatmeal and raisin stuffed acorn squash

  • Step 1
    Combine the egg, brown sugar, butter, flour, cinnamon, nutmeg, both raisins, oatmeal, and pecans and mix well.
  • Step 2
    Cut the squashes in half and remove the seeds. Cut a slice off the bottom of each half so they will sit without rolling around. Season the inside with salt. Spoon the mixture into each half of the squash.
  • Step 3
    Preheat the oven to 400 degrees F. Place the squash in a baking dish and drizzle with the olive oil and honey. Bake for about 45 minutes.
