My garden always over flows with Zucchini and I love to make different recipes with them. This is one that I like a lot because it is low calorie and taste so good. For those that are not on a diet; you can add parmesan cheese to breadcrumbs and while hot out of the oven you can dip them in your favorite pizza sauce.

Ingredients

  • 1/2 c
    italian seasoned breadcrumbs
  • 1/8 tsp
    salt
  • 1/8 tsp
    pepper
  • 1 large
    zucchini, cut into 1/4 inch slices
  • 3 large
    egg whites, lightly beaten
  • ·
    cooking spray

How to Make Norma's Zucchini Chips

Step-by-Step

  1. Preheat oven to 475
  2. Place breadcrumbs in a shallow dish
  3. Sprinkle salt and pepper evenly on zucchini slices
  4. Dip zucchini slices into egg whites and place in breadcrumbs, pressing firmly to coat.
  5. Place zucchini slices on a baking sheet coated with cooking spray
  6. Place in oven and bake for 10 minutes or until browned
  7. Remove from baking sheet unto a platter and serve hot.
  8. * also good with your favorite pizza sauce for dipping if desired
