Was a little tired from my Radiation Therapy for my cancer tonight. So I looked in the refrigerator and saw a small head of cabbage, fresh tomato's and some corn on the cob from the Farmer's Market. Mmmmm! (Veggie night at our house). Served the cabbage in small pasta bowls along with the rest of the veggies on a plate. It turned out so good that Woody wants me to make it again some day.

Ingredients

  • 1 small head of cabbage
  • 1 cup mayonnaise, light
  • 1/4 cup sugar
  • 1 teaspoon milk, low-fat
  • 1 teaspoon apple cider vinegar
  • 6 slices bacon, cooked crisp
  • - salt and pepper to taste

How To Make norma's easy hot cabbage delight

  • Step 1
    Cut the cabbage into four's and remove the heart on each piece.
  • Step 2
    Place in sauce pan and cover with water and bring to boil 10 minutes or until cabbage is tender when tested with a fork.
  • Step 3
    While cabbage is cooking mix mayonaise, sugar, milk and vinegar in a mixing bowl and stir until sugar dissolves and set aside.
  • Step 4
    Cook or microwave the bacon until crispy, break into small pieces and set aside.
  • Step 5
    When cabbage is cooked tender, remove pan from stove and drain water off the cabbage and set aside.
  • Step 6
    Place cooked hot cabbage in 2 to 4 individual bowls and pour sauce over the cabbage.
  • Step 7
    Salt and pepper to taste.
  • Step 8
    Add broken bacon pieces on top of cabbage and serve with your favorite meat or as your main dish along with other veggies.
