my husband's favorite zucchini recipe
I asked my husband if there was anything he wanted me to post. He said the zucchini dish I make mostly during the summer because we have fresh zucchini. I cook mostly by sight and taste, so recipes are not always written down. But this is pretty easy.

What a neat way to reinvent a fresh zucchini side dish. The squash cooks down with onions which gives the dish a ton of flavor. When the sour cream is added it adds a subtle sweetness to the creamy sauce. Adding a corn starch slurry thickens up the sauce a lot. If you want something thinner, we suggest leaving that out. When zucchini is in season, it's a refreshing way to serve it.

Ingredients
- 3 - zucchini (3 if you use the size you get in the store)
- 1 medium onion, sliced in rings cut in half
- 1/2 cup water
- 1/4 cup butter or margarine
- 1/2 to 1 cups sour cream (can use up to 1 cup depending on how creamy, I usually use 1 cup)
- 1 tablespoon corn starch mixed in a little water for thickening
- - salt and pepper, to taste

Step 1Slice zucchini into 1/2-inch rounds.

Step 2Add water, zucchini, onion, and butter/margarine to a medium saucepan.

Step 3Cook over medium to low heat until zucchini is very tender and onion is translucent.

Step 4Turn the heat down very low, add sour cream, and mix completely.

Step 5Once the sour cream has been warmed completely add the salt and pepper. If the sauce is too thin, a little corn starch/water mix can be added to thicken it.
