~ my greek cuke cups ~
My sister delivered me a bag of cukes from her garden this morning, so I created a way of using some. A great little appetizer with lots of flavor due to the Feta. This recipe filled one fairly large cucumber. Just double or triple depending on servings needed. I cut my cucumber slices about 3/4 inch thick. I'll be making these again, as my family loved them. Enjoy!

Ingredients
- 1 large cucumber, peeled and sliced 1/2 - 3/4 inch thick slices
- 1 1/2 tablespoons mayonnaise

How To Make ~ my greek cuke cups ~
-
Step 1After slicing and peeling cucumber, using a spoon, remove seeds from center, without going completely through to the other side. In a small bowl, add feta and smash or crumble any large chunks...you want it all same consistency. To the cheese add mayonnaise, olives, onion, parsley , Worcestershire sauce and oregano. Mix well, might need to add a touch more mayo if too thick.

Step 2Now, stuff each cucumber round. I sprinkled with a pinch of oregano. Chill until ready to serve. Enjoy!
