My sister delivered me a bag of cukes from her garden this morning, so I created a way of using some. A great little appetizer with lots of flavor due to the Feta. This recipe filled one fairly large cucumber. Just double or triple depending on servings needed. I cut my cucumber slices about 3/4 inch thick. I'll be making these again, as my family loved them. Enjoy!

Ingredients

  • 1 large cucumber, peeled and sliced 1/2 - 3/4 inch thick slices
  • 1 1/2 tablespoons mayonnaise
  • 1/4 teaspoon worcestershire sauce
  • 1 tablespoon minced, red onion
  • 1/4 cup feta cheese
  • 1 teaspoon parsley paste or chopped fresh
  • 3 medium black olives, chopped
  • 1/4 teaspoon dried oregano

How To Make ~ my greek cuke cups ~

  • Step 1
    After slicing and peeling cucumber, using a spoon, remove seeds from center, without going completely through to the other side. In a small bowl, add feta and smash or crumble any large chunks...you want it all same consistency. To the cheese add mayonnaise, olives, onion, parsley , Worcestershire sauce and oregano. Mix well, might need to add a touch more mayo if too thick.
  • Step 2
    Now, stuff each cucumber round. I sprinkled with a pinch of oregano. Chill until ready to serve. Enjoy!
