I love this creamed spinach even though I don't care for most cooked spinach dishes. I worked on this until it tasted like the one in a favorite restaurant of ours.

Ingredients

  • 1/4 c
    onions, diced
  • 2
    garlic cloves, small to medium, minced
  • 1 Tbsp
    butter
  • 1 Tbsp
    flour
  • 1 1/4 c
    half and half
  • 2 oz
    cream cheese, cut into small cubes
  • 1/8 tsp
    nutmeg
  • 1/2 tsp
    salt
  • 16 oz. pkg
    frozen spinach, thawed and sqeezed
  • 1/4 c
    plus 1 tablspn parmesan cheese, shredded

How to Make My Favorite Creamed Spinach

Step-by-Step

  1. Saute the onion and garlic in the butter until tender.
    Stir in the flour.
  2. Slowly whisk in half and half.
    Bring to a boil using medium heat.
  3. Stir for a couple of minutes until slightly thickened.
  4. Add the cream cheese, nutmeg and salt.
    Stir until cream cheese is melted.
  5. Stir in the spinach and 1/4 cup of the Parmesan cheese until throughly heated. (save the 1 Tablespoon cheese for next step)
  6. Top with the reserved 1 Tablespoon Parmesan cheese and serve!
