I love this creamed spinach even though I don't care for most cooked spinach dishes. I worked on this until it tasted like the one in a favorite restaurant of ours.

Ingredients

1/4 c
onions, diced
2
garlic cloves, small to medium, minced
1 Tbsp
butter
1 Tbsp
flour
1 1/4 c
half and half
2 oz
cream cheese, cut into small cubes
1/8 tsp
nutmeg
1/2 tsp
salt
16 oz. pkg
frozen spinach, thawed and sqeezed
1/4 c
plus 1 tablspn parmesan cheese, shredded

How to Make My Favorite Creamed Spinach

Step-by-Step

  • 1Saute the onion and garlic in the butter until tender.
    Stir in the flour.
  • 2Slowly whisk in half and half.
    Bring to a boil using medium heat.
  • 3Stir for a couple of minutes until slightly thickened.
  • 4Add the cream cheese, nutmeg and salt.
    Stir until cream cheese is melted.
  • 5Stir in the spinach and 1/4 cup of the Parmesan cheese until throughly heated. (save the 1 Tablespoon cheese for next step)
  • 6Top with the reserved 1 Tablespoon Parmesan cheese and serve!
