All of you probably know by now that I have a garden and I grow a variety of vegetables. Right now in my garden are Winter Cabbage, Collards, Greens and Mustard. My family have always grown Collards and greens so we have several ways of cooking them. I will post 2 ways and you can pick....

Ingredients

  • COLLARDS NUMBER 1
  • 2 bunches collard greens
  • 2 - ham hocks
  • 4 cups chicken broth
  • 1 large onion
  • 1 teaspoon crushed red pepper
  • 2 tablespoons brown sugar
  • 2 tablespoons lard (or olive oil)
  • 1 teaspoon salt
  • 2 tablespoons vinegar
  • COLLARDS # 2
  • 1 bunch collard greens, chopped
  • 1 medium winter cabbage, chopped
  • 1 medium onion, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon sugar
  • 2 teaspoons hot pepper sauce
  • 1 teaspoon salt

How To Make my collard greens

  • Step 1
    For Collards #1: Wash Collards, cut off big stems, cut into 1 inch strips; set aside. In a large stock pot, brown onion and ham in lard (olive oil). Keeping lid on while steaming; stir occasionally.
  • Step 2
    Add chicken broth and collards. Cook over medium low heat for 35 -40 minutes, stir in red pepper, sugar and vinegar. Adjust seasoning to your taste.
  • Step 3
    COLLARDS # 2: Wash collards and cabbage, removing tough stems, Cut into one inch strips.Set aside.
  • Step 4
    In a crock pot on medium heat steam onion in olive oil. Place chopped collards and cabbage in with onion and stir to mix. Cook until tender, about 30-40 minutes. Keeping lid on while steaming and stirring occasionally. Last 5 minutes of cooking add hot pepper sauce and sugar; stir. Adjust salt to your taste.
