There was a brief time when my daughter was unable to eat meat. I had to keep coming up with ideas for her dinner. This was one of them. (Internet photo)

Ingredients

  • 3 tablespoons olive oil
  • 1 pound fresh mushrooms, sliced-try to use at least 3 varieties
  • 3 - scallions, sliced
  • 2 cloves garlic, crushed
  • 2 tablespoons dry white wine
  • 1 1/4 cups sour cream
  • 1 tablespoon fresh tarragon, chopped
  • - parsley for garnish

How To Make mushroom stroganoff

  • Step 1
    Heat oil in a large frying pan and fry the mushrooms gently, stirring from time to time until they are softened and just cooked.
  • Step 2
    Add scallions, garlic, wine and cook for 1 minute more. Season well with salt and pepper.
  • Step 3
    Stir in sour cream and heat but do not boil. Stir in tarragon. Garnish with parsley. Serve with rice, noodles or potatoes.
