There was a brief time when my daughter was unable to eat meat. I had to keep coming up with ideas for her dinner. This was one of them. (Internet photo)

3 Tbsp
olive oil
1 lb
fresh mushrooms, sliced-try to use at least 3 varieties
scallions, sliced
2 clove
garlic, crushed
2 Tbsp
dry white wine
1 1/4 c
sour cream
1 Tbsp
fresh tarragon, chopped
parsley for garnish

How to Make Mushroom Stroganoff


  • 1Heat oil in a large frying pan and fry the mushrooms gently, stirring from time to time until they are softened and just cooked.
  • 2Add scallions, garlic, wine and cook for 1 minute more. Season well with salt and pepper.
  • 3Stir in sour cream and heat but do not boil. Stir in tarragon. Garnish with parsley. Serve with rice, noodles or potatoes.
