Ingredients

  • 3 Tbsp
    olive oil
  • 1 lb
    fresh mushrooms, sliced-try to use at least 3 varieties
  • 3
    scallions, sliced
  • 2 clove
    garlic, crushed
  • 2 Tbsp
    dry white wine
  • 1 1/4 c
    sour cream
  • 1 Tbsp
    fresh tarragon, chopped
  • ·
    parsley for garnish

How to Make Mushroom Stroganoff

Step-by-Step

  1. Heat oil in a large frying pan and fry the mushrooms gently, stirring from time to time until they are softened and just cooked.
  2. Add scallions, garlic, wine and cook for 1 minute more. Season well with salt and pepper.
  3. Stir in sour cream and heat but do not boil. Stir in tarragon. Garnish with parsley. Serve with rice, noodles or potatoes.
