3 Tbspolive oil
1 lbfresh mushrooms, sliced-try to use at least 3 varieties
2 clovegarlic, crushed
2 Tbspdry white wine
1 1/4 csour cream
1 Tbspfresh tarragon, chopped
·parsley for garnish
How to Make Mushroom Stroganoff
- Heat oil in a large frying pan and fry the mushrooms gently, stirring from time to time until they are softened and just cooked.
- Add scallions, garlic, wine and cook for 1 minute more. Season well with salt and pepper.
- Stir in sour cream and heat but do not boil. Stir in tarragon. Garnish with parsley. Serve with rice, noodles or potatoes.
