Ingredients
- 3 tablespoons olive oil
- 1 pound fresh mushrooms, sliced-try to use at least 3 varieties
- 3 - scallions, sliced
- 2 cloves garlic, crushed
- 2 tablespoons dry white wine
- 1 1/4 cups sour cream
- 1 tablespoon fresh tarragon, chopped
- - parsley for garnish
How To Make mushroom stroganoff

Step 1Heat oil in a large frying pan and fry the mushrooms gently, stirring from time to time until they are softened and just cooked.

Step 2Add scallions, garlic, wine and cook for 1 minute more. Season well with salt and pepper.

Step 3Stir in sour cream and heat but do not boil. Stir in tarragon. Garnish with parsley. Serve with rice, noodles or potatoes.
