My mother grew up on a ranch in the western slopes of Colorado. Her family was from Pennsylvania. She grew up having fried cucumbers. Therefore, I grew up eating the same. I love this recipe. It has such a wonderful flavor. I hope you will also enjoy this recipe. It is so easy.

Blue Ribbon Recipe

We loved these fried cucumbers dipped in ranch dressing. The golden brown crust has a slight crunch when you bite into them. Then you get a burst of the juicy cucumber. They're a little salty and tangy like a fried pickle. Great for snacking.

Ingredients For mom's fried cucumbers

  • 5 md
    cucumbers, sliced length wise-medium
  • 4 lg
    eggs, beaten
  • 1/2 c
    cornmeal
  • 1 c
    all-purpose flour
  • 1 tsp
    salt
  • 1 tsp
    garlic poweder
  • 1 1/2 tsp
    pepper
  • 1/2 c
    cooking oil
  • additional salt and pepper

How To Make mom's fried cucumbers

  • Slice off both ends of a cucumber.

    Wash and slice off both ends of the cucumbers.
  • Rub each end of the cucumber in a circular motion on a cutting board.

    Rub each end of the cucumber in a circular motion on a cutting board until it shows a slight foam. This helps get rid of the bitterness.
  • Slice the cucumbers.

    Cut cross or lengthwise 1/4 inch thickness with rind still on.
  • Sprinkle with salt and let sit.

    Sprinkle the slices with salt and let them sit for 10 minutes to release excess water.
  • Pat cucumbers dry.

  • Beat 4 eggs in a bowl.
