Ingredients

  • 1 - eggplant
  • 1 - egg
  • 1/3 cup milk
  • 1/2 teaspoon salt
  • 2 cloves garlic, minced
  • 1/2 pound mozzarella cheese, sliced
  • 3 - tomatoes, canned italian-style and diced
  • 1 teaspoon oregano, dried
  • 1 teaspoon salt & pepper
  • 1 tablespoon olive oil, extra virgin

How To Make *** mom's eggplant ***

  • Step 1
    Preheat oven to 350 degrees F.
  • Step 2
    In medium bowl, beat egg, milk & salt; mix well. Cut eggplant 1/4" thick. Brown in fry pan with garlic & any oil.
  • Step 3
    Place cooked eggplant into greased casserole dish. Layer of tomatoes & cheese, then oregano, salt & pepper, then repeat all layers. On last layer pour olive oil over. Bake 30 minutes, covered. Take cover off & cook 10 minutes longer.
