Ingredients
- 1 - eggplant
- 1 - egg
- 1/3 cup milk
- 1/2 teaspoon salt
- 2 cloves garlic, minced
- 1/2 pound mozzarella cheese, sliced
- 3 - tomatoes, canned italian-style and diced
- 1 teaspoon oregano, dried
- 1 teaspoon salt & pepper
- 1 tablespoon olive oil, extra virgin
How To Make *** mom's eggplant ***

Step 1Preheat oven to 350 degrees F.

Step 2In medium bowl, beat egg, milk & salt; mix well. Cut eggplant 1/4" thick. Brown in fry pan with garlic & any oil.

Step 3Place cooked eggplant into greased casserole dish. Layer of tomatoes & cheese, then oregano, salt & pepper, then repeat all layers. On last layer pour olive oil over. Bake 30 minutes, covered. Take cover off & cook 10 minutes longer.
