Ingredients

  • 1 pound eggplant, peeled & diced
  • 3 medium onions, chopped
  • 1 - egg, lightly beaten
  • - salt & pepper
  • 2 tablespoons butter, softened
  • 1 cup sour cream
  • 1 cup shredded mozzarella cheese
  • 1 cup ritz cracker crumbs
  • 1 stick butter

How To Make *** mom's eggplant casserole ***

  • Step 1
    Preheat oven to 350 degrees F.
  • Step 2
    In large saucepan, eggplant & onion. Add enough water to 1" depth. Bring to boil, reduce & simmer until tender. Drain.
  • Step 3
    In large bowl, pour mixture in & add salt, pepper & 2 Tbsp butter; mix well.
  • Step 4
    Mix sour cream, egg & cheese in another bowl.
  • Step 5
    In a 13 x 9" baking dish, add 1/2 of eggplant mixture. Then sprinkle with 1/2 cheese mixture on top. Repeat layers. Top with cracker crumbs, slice stick of butter into pieces & place all over top of crackers. Bake 45 minutes.
