Ingredients
- 1 pound eggplant, peeled & diced
- 3 medium onions, chopped
- 1 - egg, lightly beaten
- - salt & pepper
- 2 tablespoons butter, softened
- 1 cup sour cream
- 1 cup shredded mozzarella cheese
- 1 cup ritz cracker crumbs
- 1 stick butter
How To Make *** mom's eggplant casserole ***

Step 1Preheat oven to 350 degrees F.

Step 2In large saucepan, eggplant & onion. Add enough water to 1" depth. Bring to boil, reduce & simmer until tender. Drain.

Step 3In large bowl, pour mixture in & add salt, pepper & 2 Tbsp butter; mix well.

Step 4Mix sour cream, egg & cheese in another bowl.

Step 5In a 13 x 9" baking dish, add 1/2 of eggplant mixture. Then sprinkle with 1/2 cheese mixture on top. Repeat layers. Top with cracker crumbs, slice stick of butter into pieces & place all over top of crackers. Bake 45 minutes.
