mom's coleslaw with a kick

My mother developed this recipe for my father to enjoy while watching sports on T.V. We called sports day meals "indoor picnics". My father loved spicy foods (as do the rest of the family), so my mother kicked this up a notch with mustard seed and mustard powder. My parents had 10 children, and took in many others over the years. Once they took in a family of 8 children when their father was killed in a farming accident. The point being... we always had a house full of people to feed, and my mother did a wonderful job of it! This is a great make ahead recipe!

Ingredients

  • 2 large cabbage, shredded (or grated)
  • 1 large onion (minced fine)
  • 3 large carrot shredded (or grated)
  • SAUCE
  • 1 teaspoon celery seed
  • 1 1/2 cups mayonnaise
  • 1 cup sour cream
  • 1 tablespoon lemon juice, fresh
  • 1 tablespoon vinegar
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1/2 - 1 teaspoons mustard seed
  • 1/2 - 1 teaspoons hot mustard powder

How To Make mom's coleslaw with a kick

  • Step 1
    Prepare the cabbage, carrots and onion as stated in ingredients. Put in a lage bowl or roast pan. Set aside.
  • Step 2
    Whisk together all remaining ingredients until well blended. Pour this over the vegetable mixture. Toss until all is well coated. Put into a large bowl and cover tightly. Put in refrigerator overnight to let the flavors meld. When ready to serve, stir it and taste it... if it isn't hot enough... add a bit more mustard seed and hot mustard powder (I buy it in bulk at food co-op) and toss well.
