as kids we would not eat egg plant,Mom took all five of us out to whites cafe and we all liked the looks of there eggplant dressing so we tried it and loved it. So my Mom made friends with the cook latter and got her recipe. then every summer we would look forward from then on, to Mom making this for us.Yumm.

Ingredients For momma's baked eggplant !

  • 1 lg
    eggplant
  • small can
    pet milk
  • 1/4 c
    diced bell pepper
  • 3 Tbsp
    butter, cold
  • dash
    black pepper
  • 1
    egg
  • 1 can
    tomatoes, canned diced-drain juice
  • 4 oz
    white bread crumbs or 1/2 cup
  • 1/4 c
    diced onion
  • 1/4 c
    diced celery
  • 1 Tbsp
    pimento
  • 1 tsp
    salt
  • pinch
    sage, dried
  • 2 oz
    sharp chedder cheese

How To Make momma's baked eggplant !

    cut eggplant into chunks,soak 5 min.in real salted water drain and cook in water until tender & soft.

    saute in butter,green peppers,onion,celery,tomatoes.until soft,but not brown.

    beat egg well,add milk bread crumbs,pepper,mix then add drained eggplant & the rest of ingredients.

    Bake covered 350 degrees, for 20 min.
