mixed veggie casserole

My good friend, Rita, brought this casserole to my birthday party luncheon and everyone raved about it. There wasn't anything left at the end of the party. She gave the recipe to me, so I'm passing it on. She doubled it for my party and baked it in a 9 X 13 inch baking pan. I think she said that it took an extra 10 minutes or so to bake.

Ingredients
- 2 cans veg all mixed vegetables or other brand of mixed vegetables, drained
- 1 can shoe peg corn, drained
- 1 can sliced water chestnuts, drained
- 1 cup mayo
- 1 cup shredded cheddar cheese
- 2 tablespoons chopped onions
- 1/2 stick butter or margarine
- 1 - sleeve of ritz crackers, crushed
How To Make mixed veggie casserole

Step 1Mix first 6 ingredients,and pour into oven safe baking dish. About 8 x 8 size.

Step 2Melt 1/2 stick butter and mix with the 1 sleeve of crushed Ritz crackers. (I used a smooth meat mallet and crushed up the crackers when they were still sealed in the sleeve.)

Step 3Pour Ritz Cracker mixture over veggies in baking dish.

Step 4Bake at 350 degrees for about 20-30 minutes, until set and top is golden brown.
