~ mixed cucumber salad ~
This is another very old recipe of my Grandma's. I hope you enjoy it as much as we did growing up. She would either make this, creamed cucumber or vinegar and oil. This one is my favorite. I think it's because of the addition of other vegetables. So tasty and crunchy! Enjoy!

Ingredients
- 3 medium cucumbers, thin sliced - a mandolin makes short work of it
- 1 1/2 tablespoons salt
- 1 - red bell pepper, cut in half, seeded and thinly sliced
- 1 small clove garlic. minced small
- 1 medium red onion, thinly sliced
- 2 stalks celery, thinly sliced
- 1 cup white or rice wine vinegar
- 1 cup sugar
- 1 teaspoon celery seed
- 3/4 teaspoon mustard seed
How To Make ~ mixed cucumber salad ~

Step 1In a small saucepan, place sugar, vinegar, mustard and celery seed. Bring to a boil and stir for 1 minute or until sugar is completely dissolved. Set aside to cool.

Step 2Place all of the sliced vegetables in a bowl and sprinkle with salt. Toss to coat. Let set for 1 hour. Toss occasionally. Drain well.

Step 3Pour the vinegar mixture over the drained vegetables and chill for at least 2 hours. Serve as a side dish with any meal.
