~ mixed cucumber salad ~

This is another very old recipe of my Grandma's. I hope you enjoy it as much as we did growing up. She would either make this, creamed cucumber or vinegar and oil. This one is my favorite. I think it's because of the addition of other vegetables. So tasty and crunchy! Enjoy!

Ingredients For ~ mixed cucumber salad ~

  • 3 md
    cucumbers, thin sliced - a mandolin makes short work of it
  • 1 1/2 Tbsp
    salt
  • 1
    red bell pepper, cut in half, seeded and thinly sliced
  • 1 sm
    clove garlic. minced small
  • 1 md
    red onion, thinly sliced
  • 2 stalk
    celery, thinly sliced
  • 1 c
    white or rice wine vinegar
  • 1 c
    sugar
  • 1 tsp
    celery seed
  • 3/4 tsp
    mustard seed

How To Make ~ mixed cucumber salad ~

    In a small saucepan, place sugar, vinegar, mustard and celery seed. Bring to a boil and stir for 1 minute or until sugar is completely dissolved. Set aside to cool.

    Place all of the sliced vegetables in a bowl and sprinkle with salt. Toss to coat. Let set for 1 hour. Toss occasionally. Drain well.

    Pour the vinegar mixture over the drained vegetables and chill for at least 2 hours. Serve as a side dish with any meal.
