I have always loved zucchini, but never saw mini zucchini until Barb made these as a side dish on one of my visits to NC. OMG, it is so good! I will drive to Trader Joes for her any time, just for this yummy zucchini dish!

How to Make Mini Parmesan Zucchini, Barb

Step-by-Step

  1. Slice the mini zucchini in half. Spray an electric skillet with a lid on it, with Pam. It should be at 350 degrees before you do. Fry the zucchinis slice side down first, and when slightly brown, flip and cook the other side. You then sprinkle with the shredded parmesan cheese and cover the pan with the lid so that the cheese melts.
