mini parmesan zucchini, barb
I have always loved zucchini, but never saw mini zucchini until Barb made these as a side dish on one of my visits to NC. OMG, it is so good! I will drive to Trader Joes for her any time, just for this yummy zucchini dish!

Ingredients
- 1 bag mini zucchini (we get them in the produce section of trader joe's)
- - pam spray
- - shredded parmesan cheese
- - salt and pepper to taste
How To Make mini parmesan zucchini, barb

Step 1Slice the mini zucchini in half. Spray an electric skillet with a lid on it, with Pam. It should be at 350 degrees before you do. Fry the zucchinis slice side down first, and when slightly brown, flip and cook the other side. You then sprinkle with the shredded parmesan cheese and cover the pan with the lid so that the cheese melts.

Step 28 min on flat side to brown. Flip on round side, add cheese, cover and melt, about 2 min.
