Mexican Thai Fried Red Tomatoes

All my favorite flavors on one platter!! Low carb. This was inspired by Sonia Mendez Garcia

1 large
1/4 c
plain greek yogurt or sour cream
4 oz
manchego cheese, finely grated
1 c
finely crushe chicharones (pig skins)
**thai paste
**cilantro, fresh
**cracked black pepper


1Place Chicharones in food processor and bring them to a finely crushed state. Remove any pcs that don't crush, they will be very hard after frying.
2Finely grated cheese. Mix crumbs and cheese together.
3Slice LARGE tomato fairly thick. I got 4 slices out of mine. Blot dry as much as possible with a paper towel. Rub both sides with yogurt or sour cream. Dip into crumbs and coat well.
4Fry in a med high oil for a few minutes on each side till they are slightly brown.
5Remove and garnish with Thai paste, cracked black pepper and cilantro. Add more cheese or sour cream if desired.
