Ingredients
- 1 large tomato
- 1/4 cup plain greek yogurt or sour cream
- 4 ounces manchego cheese, finely grated
- 1 cup finely crushe chicharones (pig skins)
- - **thai paste
- - **cilantro, fresh
- - **cracked black pepper
How To Make mexican thai fried red tomatoes

Step 1Place Chicharones in food processor and bring them to a finely crushed state. Remove any pcs that don't crush, they will be very hard after frying.

Step 2Finely grated cheese. Mix crumbs and cheese together.

Step 3Slice LARGE tomato fairly thick. I got 4 slices out of mine. Blot dry as much as possible with a paper towel. Rub both sides with yogurt or sour cream. Dip into crumbs and coat well.

Step 4Fry in a med high oil for a few minutes on each side till they are slightly brown.

Step 5Remove and garnish with Thai paste, cracked black pepper and cilantro. Add more cheese or sour cream if desired.
