Ingredients

  • 1 large tomato
  • 1/4 cup plain greek yogurt or sour cream
  • 4 ounces manchego cheese, finely grated
  • 1 cup finely crushe chicharones (pig skins)
  • - **thai paste
  • - **cilantro, fresh
  • - **cracked black pepper

How To Make mexican thai fried red tomatoes

  • Step 1
    Place Chicharones in food processor and bring them to a finely crushed state. Remove any pcs that don't crush, they will be very hard after frying.
  • Step 2
    Finely grated cheese. Mix crumbs and cheese together.
  • Step 3
    Slice LARGE tomato fairly thick. I got 4 slices out of mine. Blot dry as much as possible with a paper towel. Rub both sides with yogurt or sour cream. Dip into crumbs and coat well.
  • Step 4
    Fry in a med high oil for a few minutes on each side till they are slightly brown.
  • Step 5
    Remove and garnish with Thai paste, cracked black pepper and cilantro. Add more cheese or sour cream if desired.
