  • 1 large
  • 1/4 c
    plain greek yogurt or sour cream
  • 4 oz
    manchego cheese, finely grated
  • 1 c
    finely crushe chicharones (pig skins)
  • ·
    **thai paste
  • ·
    **cilantro, fresh
  • ·
    **cracked black pepper

How to Make Mexican Thai Fried Red Tomatoes


  1. Place Chicharones in food processor and bring them to a finely crushed state. Remove any pcs that don't crush, they will be very hard after frying.
  2. Finely grated cheese. Mix crumbs and cheese together.
  3. Slice LARGE tomato fairly thick. I got 4 slices out of mine. Blot dry as much as possible with a paper towel. Rub both sides with yogurt or sour cream. Dip into crumbs and coat well.
  4. Fry in a med high oil for a few minutes on each side till they are slightly brown.
  5. Remove and garnish with Thai paste, cracked black pepper and cilantro. Add more cheese or sour cream if desired.
