'mexican street corn' casserole

I put this recipe together for a church social. Everyone loved it.

Ingredients

  • 2 cans whole kernel corn, well drained
  • 2 cans cream style corn
  • 2 - eggs, beaten
  • 1/2 cup butter, melted
  • 1/2 cup grated parmesan cheese
  • 1/3 cup mayonnaise
  • 1/4 cup lemon juice
  • 1 teaspoon chili powder (heaping teaspoon)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

How To Make 'mexican street corn' casserole

  • Step 1
    Preheat oven to 350 degrees.
  • Step 2
    Mix all ingredients together in a large bowl. Spray a 9x13 pan with Pam cooking spray. Pour mixture into pan.
  • Step 3
    Bake for 1 hour at 350 degrees.
