I had this at work and it was awesome. It was so good.

Ingredients

  • 1/4 cup bell pepper
  • 1/4 cup chopped onion
  • 1 package spanish rice cooked - prepared
  • 8 ounces velveeta cheese (small size) cut into small pieces to melt.
  • 1 can cream of mushroom soup
  • 2 cans corn drained

How To Make mexican corn salad

  • Step 1
    Saute bell pepper and onion.
  • Step 2
    Cook rice to directions.
  • Step 3
    Melt soup and cheese in microwave.
  • Step 4
    Add corn and other ingredients and place in a crock pot to serve or heat and serve.
