    corn, cream-style
  • 1 1/2 c
    cornmeal
  • 1 1/4 c
    buttermilk
  • 1 c
    butter, melted
  • 8 oz
    green chile peppers, chopped
  • 2 medium
    onions, chopped
  • 1 tsp
    baking soda
  • 3 c
    cheddar cheese, shredded

How to Make Mexican Corn Casserole

Step-by-Step

  1. Beat eggs in a large bowl; add the next 8 ingredients and mix well.
  2. Stir in 2 cups cheese. Pour into a greased 13"x9"x2" baking dish.
  3. Bake, uncovered, at 325 for 1 hour; top with remaining cheese.
  4. Let stand for 15 minutes before serving.
  5. Garnish with peppers if desired.
