butter, melted
8 oz
green chile peppers, chopped
2 medium
onions, chopped
1 tsp
baking soda
3 c
cheddar cheese, shredded

How to Make Mexican Corn Casserole


  • 1Beat eggs in a large bowl; add the next 8 ingredients and mix well.
  • 2Stir in 2 cups cheese. Pour into a greased 13"x9"x2" baking dish.
  • 3Bake, uncovered, at 325 for 1 hour; top with remaining cheese.
  • 4Let stand for 15 minutes before serving.
  • 5Garnish with peppers if desired.
