Wanted some Mexican sweet corn but didn't want to run to the market for fresh corn, so I used frozen kernels and it was delicious.

Ingredients

  • 1 bag frozen corn, thawed
  • 2 tablespoons butter
  • 2 tablespoons mayonnaise
  • 2 teaspoons cayenne pepper
  • - salt and pepper to taste
  • 1 cup cotija or parmesan cheese

How To Make mexican corn casserole

  • Step 1
    Cook frozen corn in the microwave as instructed.
  • Step 2
    Mix in the butter and then the mayonnaise.
  • Step 3
    Add the cayenne pepper about 2 teaspoons or to how much heat you want and then add the salt and pepper to taste.
  • Step 4
    Mix in the crumbled Cotija or Parmesan cheese and microwave until heated through, about 4 minutes. Serve hot.
