Wanted some Mexican sweet corn but didn't want to run to the market for fresh corn, so I used frozen kernels and it was delicious.

Ingredients
- 1 bag frozen corn, thawed
- 2 tablespoons butter
- 2 tablespoons mayonnaise
- 2 teaspoons cayenne pepper
- - salt and pepper to taste
- 1 cup cotija or parmesan cheese
How To Make mexican corn casserole

Step 1Cook frozen corn in the microwave as instructed.

Step 2Mix in the butter and then the mayonnaise.

Step 3Add the cayenne pepper about 2 teaspoons or to how much heat you want and then add the salt and pepper to taste.

Step 4Mix in the crumbled Cotija or Parmesan cheese and microwave until heated through, about 4 minutes. Serve hot.
