Wanted some Mexican sweet corn but didn't want to run to the market for fresh corn, so I used frozen kernels and it was delicious.

frozen corn, thawed
2 Tbsp
butter
2 Tbsp
mayonnaise
2 tsp
cayenne pepper
salt and pepper to taste
1 c
cotija or parmesan cheese

How to Make Mexican Corn Casserole

Step-by-Step

  • 1Cook frozen corn in the microwave as instructed.
  • 2Mix in the butter and then the mayonnaise.
  • 3Add the cayenne pepper about 2 teaspoons or to how much heat you want and then add the salt and pepper to taste.
  • 4Mix in the crumbled Cotija or Parmesan cheese and microwave until heated through, about 4 minutes. Serve hot.
