Ingredients

  • 1 large head cauliflower
  • 2 tablespoons avocado oil
  • 1 cup mayonnaise
  • 1 tablespoon Dijon or whole grain mustard
  • salt and pepper
  • 1/2 lemon juice and zest
  • 1/2 cup freshly grated Parmesan cheese
  • 2 teaspoons smoked paprika

How To Make mayo, mustard and cheese roasted cauliflower

  • Step 1
    Preheat oven 375 degrees F. Remove the leaves from the cauliflower and trim the stem but do not remove it. Rub the avocado oil over the whole head and season with salt.
  • Step 2
    Place in a cast iron pan or baking pan and cover with foil. Bake for 30 minutes. Mix the remaining ingredients together. Remove the foil from the cauliflower.
  • Step 3
    Spoon the mayo mixture over the head of the cauliflower. Bake uncovered for another 30 minutes. Slice into wedges to serve.
