2 largeyellow onions
2 Tbspsweet butter, unsalted
1 Tbspolive oil, extra virgin
1/4 cwhite wine, chicken stock, or filtered water
1 pinchsalt, kosher variety
1 Tbspbalsamic vinegar (optional)
