Mashed Sweet Potatoes with Anaheim Chiles
- 1 large sweet potato, peeled and cubed, 10 to 12 oz
- 2 tbsp. unsalted butter
- 1 anaheim chile, seeded and sliced
- salt and black pepper to taste
How to Make Mashed Sweet Potatoes with Anaheim Chiles
- 1Boil sweet potato in salted water in pan over high heat til tender, about 10 minutes.
- 2Drain potato and return to pan to dry briefly over medium heat.
Mash potato to desired consistency. Stir in butter and chile. Season with salt and pepper.
