    1 large sweet potato, peeled and cubed, 10 to 12 oz
  • ·
    2 tbsp. unsalted butter
  • ·
    1 anaheim chile, seeded and sliced
  • ·
    salt and black pepper to taste

How to Make Mashed Sweet Potatoes with Anaheim Chiles


  1. Boil sweet potato in salted water in pan over high heat til tender, about 10 minutes.
  2. Drain potato and return to pan to dry briefly over medium heat.
    Mash potato to desired consistency. Stir in butter and chile. Season with salt and pepper.
