Another winner from the Schwan's people! As a child, I liked "tato cakes" better than the original potatoes. Still love them! This is SO simple.

Ingredients

  • 2 cups mashed potatoes (can use frozen after thawing or leftovers)
  • 2 teaspoons all purpose flour
  • 1 medium egg, beaten
  • 1/2 cup all purpose flour
  • 1 teaspoon garlic powder
  • - salt and pepper to taste
  • 2 tablespoons vegetable oil
  • 2 tablespoons butter

How To Make mashed potato cakes

  • Step 1
    Beat egg into potatoes, along with 2 tsp. flour (if needed). Divide potatoes to make 8 portions and form into patties.
  • Step 2
    Mix together 1/2 cup flour, the garlic, salt and pepper and dredge uncooked patties with flour mixture.
  • Step 3
    Heat oil and butter in large skillet over medium-high heat and cook patties 10-12 minutes or until a golden brown on each side. Turn patties halfway through cooking time.
  • Step 4
    Great with sour cream, bacon bits and chives!
