How to Make MASHED POTATO CAKES
1Beat egg into potatoes, along with 2 tsp. flour (if needed). Divide potatoes to make 8 portions and form into patties.
2Mix together 1/2 cup flour, the garlic, salt and pepper and dredge uncooked patties with flour mixture.
3Heat oil and butter in large skillet over medium-high heat and cook patties 10-12 minutes or until a golden brown on each side. Turn patties halfway through cooking time.
4Great with sour cream, bacon bits and chives!
