My mother's dear friend, Patsy, used to make this dish for her all the time. This was one of her favorite dishes.

Ingredients

  • 1 cup green onions, chopped
  • 1 - onion, chopped
  • 1 - bell pepper, chopped
  • 1 cup sugar
  • 3/4 cup white vinegar
  • 1/2 cup canola oil
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 cup celery, chopped fine
  • 1 jar pimento peppers, drained
  • 1 can shoepeg corn, drained
  • 1 can english peas, drained
  • 1 can french style beans, drained

How To Make marinated vegetables

  • Step 1
    Combine the sugar, vinegar, canola oil, black pepper, and salt. Bring to a boil and let cool.
  • Step 2
    Mix english peas, beans, and corn. Add remaining ingredients.
  • Step 3
    Pour oil mixture over all vegetables. Let set in refrigerator overnight. Serve chilled or room temperature.
