My mother's dear friend, Patsy, used to make this dish for her all the time. This was one of her favorite dishes.

Ingredients

pimento peppers, drained

How to Make Marinated Vegetables

Step-by-Step

  • 1Combine the sugar, vinegar, canola oil, black pepper, and salt. Bring to a boil and let cool.
  • 2Mix english peas, beans, and corn. Add remaining ingredients.
  • 3Pour oil mixture over all vegetables. Let set in refrigerator overnight. Serve chilled or room temperature.
