Someone brought this to a picnic lunch years ago. She was kind enough to share the recipe with me. hope you enjoy it too.

Ingredients

  • ·
    3/4 cup vinegar
  • ·
    1/2 cup vegetable oil
  • ·
    1 tsp. salt
  • ·
    1 cup sugar
  • ·
    1 tbsp. water
  • ·
    1 tsp. pepper
  • ·
    1 17oz. can shoe-peg corn
  • ·
    1 16 oz. can french-cut green beans
  • ·
    1 2oz. jar chopped pimento
  • ·
    1 cup chopped celery
  • ·
    1 finely chopped green pepper
  • ·
    1 chopped bunch green onions

How to Make MARINATED VEGETABLES

Step-by-Step

  1. Combine first 6 ingredients; bring to a boil, stirring to dissolve sugar; cool.
  2. Combine vegetables; then stir in vinegar mixture.
  3. Refrigerate, stirring occasionally.
  4. This is best a day after preparation, but good for a couple of weeks. This is a salad as well as a side dish vegetable.
