MARINATED VEGETABLES

Ingredients

·3/4 cup vinegar
-
·1/2 cup vegetable oil

·1 tsp. salt

·1 cup sugar

·1 tbsp. water
-
·1 tsp. pepper
-
·1 17oz. can shoe-peg corn

·1 16 oz. can french-cut green beans
-
·1 2oz. jar chopped pimento
-
·1 cup chopped celery
-
·1 finely chopped green pepper
-
·1 chopped bunch green onions
How to Make MARINATED VEGETABLES
- Combine first 6 ingredients; bring to a boil, stirring to dissolve sugar; cool.
- Combine vegetables; then stir in vinegar mixture.
- Refrigerate, stirring occasionally.
- This is best a day after preparation, but good for a couple of weeks. This is a salad as well as a side dish vegetable.
