I am making this quick and easy marination tomato dish for this eve's supper. It is a good dish for tomatoes which lack that garden fresh, sweet taste.

Ingredients
- 1 to 2 large tomatoes, sliced
- 1/3 cup olive oil
- 1/4 cup red wine vinegar
- 1 clove garlic, minced or 1/2 tsp of jar minced garlic
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh basil, chopped
- 2 tablespoons onion, diced
- 1 teaspoon sea salt
- 1/4 teaspoon ground black pepper
- - optional, brown sugar to taste (i use 1 tblsp)
How To Make marinated tomatoes

Step 1In a non-aluminum pan, place sliced tomatoes in a single layer. Mix remaining ingredients and pour/spoon over tomatoes. Cover and chill 1 to 3 hours.

Step 2Optional, using an electric knife, cut a thin slice of lettuce off a head of lettuce and place marinated tomato slice atop to make a simple salad. The electric knife doesnt cause bruising of lettuce and no need to use salad dressing with this dish.
