Marinated Tomatoes

It is a good dish for tomatoes which lack that garden fresh, sweet taste.
Ingredients

1 to 2 largetomatoes, sliced

1/3 colive oil

1/4 cred wine vinegar

1 clovegarlic, minced or 1/2 tsp of jar minced garlic

2 Tbspfresh parsley, chopped

1 Tbspfresh basil, chopped

2 Tbsponion, diced
-
1 tspsea salt
-
1/4 tspground black pepper

·optional, brown sugar to taste (i use 1 tblsp)
How to Make Marinated Tomatoes
- In a non-aluminum pan, place sliced tomatoes in a single layer. Mix remaining ingredients and pour/spoon over tomatoes. Cover and chill 1 to 3 hours.
- Optional, using an electric knife, cut a thin slice of lettuce off a head of lettuce and place marinated tomato slice atop to make a simple salad.
The electric knife doesnt cause bruising of lettuce and no need to use salad dressing with this dish.
