I'm such a fan of fat Greek kalamata olives and pitas brands of Mediterranean feta cheese. I love the saltiness and cleanness of the taste of Feta, and its wonderful texture.

Ingredients

  • 2 cups green olives
  • 2 cups black olives
  • 1 3/4 packages blocks pitas feta cheese,cut into large squares
  • 4 cloves large garlic cloves,skinned and halved
  • 1 tablespoon whole coriander seeds,lightly crushed
  • 2 - fresh red chilies, halved and seeded
  • 2 - fresh green chilies, halved and seeded
  • 2 - fresh rosemary sprigs
  • - olive oil for preserving
  • 1 - large glass jar,with lid

How To Make marinated olives and feta.."food of the gods"

  • Step 1
    place olives with feta cheese,garlic,coriander,chilies and rosemary in a large glass dish,toss gently to mix.
  • Step 2
    add the mixture into a large glass jar,and fill olive oil to the brim.
  • Step 3
    seal the jar and place into the refrigerator until requires....
  • Step 4
    serve as an entree with drinks....enjoy
