Ingredients

  • 1 lb
    small mushrooms, cleaned
  • 3 Tbsp
    olive oil
  • 2 Tbsp
    lemon juice
  • 1/2 tsp
    salt
  • 1/2 tsp
    thyme
  • 2
    garlic cloves, chopped
  • ·
    black pepper
  • 2 Tbsp
    parsley

How to Make Marinated Mushrooms

Step-by-Step

  1. Slice mushroom stems, leave the caps whole.
  2. Place in a pot with a small amount of water and cook gently for 15 minutes.
  3. Reserve the stock for soups.
  4. Combine the remaining ingredients.
  5. Place mushrooms in the marinade and let sit for at least 2 hours, either in the fridge or at room temperature, stirring ocassionally.
