I used to not care for these growing up, as Mom didn't put any dairy in them. Well, 45 years later, while working @ an assisted living home, the cook found this in an old cookbook and made them up. Thank you Nita. I was skeptical, but tried them and they were the bomb.

Ingredients

  • 3/4 c
    sugar
  • 1 tsp
    salt
  • dash(es)
    pepper
  • 2/3 c
    apple cider vinegar (white will work, too)
  • 1/4 c
    water
  • 1 1/2 c
    mayonnaise or miracle whip
  • 2-3
    cucumbers, peeled, sliced in coins
  • 1-2
    sweet, red, yellow or white onions, sliced into rings or 1/2 rings

How to Make MARINATED CUKES AND ONIONS

Step-by-Step

  1. Mix all ingredients, except veggies, with a whip until smooth. Add veggies at this point. Keep refrigerated. Add more veggies as needed.
  2. Use your imagination...zucchini, radishes, don't just use what I've posted. Use what's in your garden or your local farmer's market. Happy Cookin'
