This recipe was given to me in 1978 when I moved into a new home in South Jersey. My neighbor was a gourmet cook and every time I make these Carrots, it bring back sweet memories as she passed away at a very young age.

2 lbs, carrots
(1) large onion
1 large green pepper
1 can tomato soup
1 cup of white sugar
1/2 cup of salad oil
3/4 cup white vinegar
1 tsp salt
1 tsp pepper

How to Make Marinated Carrots


  • 1clean and slice carrots diagonally and cook along with onion that has been cut into rings and pepper strips, until tender, drain and cool
  • 2combine rest of ingredients and boil until sugar is dissolved. Pour mixture over the carrots, onions and peppers.
  • 3Put into the refrigerator in a covered container. Better to make them ahead of time. Will last for days.
