This recipe was given to me in 1978 when I moved into a new home in South Jersey. My neighbor was a gourmet cook and every time I make these Carrots, it bring back sweet memories as she passed away at a very young age.

Ingredients

  • bag 2 lbs, carrots
  • - (1) large onion
  • - 1 large green pepper
  • - 1 can tomato soup
  • - 1 cup of white sugar
  • - 1/2 cup of salad oil
  • - 3/4 cup white vinegar
  • - 1 tsp salt
  • - 1 tsp pepper

How To Make marinated carrots

  • Step 1
    clean and slice carrots diagonally and cook along with onion that has been cut into rings and pepper strips, until tender, drain and cool
  • Step 2
    combine rest of ingredients and boil until sugar is dissolved. Pour mixture over the carrots, onions and peppers.
  • Step 3
    Put into the refrigerator in a covered container. Better to make them ahead of time. Will last for days.
