marinated carrots
This recipe was given to me in 1978 when I moved into a new home in South Jersey. My neighbor was a gourmet cook and every time I make these Carrots, it bring back sweet memories as she passed away at a very young age.

Ingredients
- bag 2 lbs, carrots
- - (1) large onion
- - 1 large green pepper
- - 1 can tomato soup
- - 1 cup of white sugar
- - 1/2 cup of salad oil
- - 3/4 cup white vinegar
- - 1 tsp salt
- - 1 tsp pepper
How To Make marinated carrots

Step 1clean and slice carrots diagonally and cook along with onion that has been cut into rings and pepper strips, until tender, drain and cool

Step 2combine rest of ingredients and boil until sugar is dissolved. Pour mixture over the carrots, onions and peppers.

Step 3Put into the refrigerator in a covered container. Better to make them ahead of time. Will last for days.
