Ingredients

  • 2.5 lb
    asparagus
  • 10
    green onions
  • 2
    red bell peppers, cut into 20 strips
  • 1 c
    red wine vinegar, or balsamic vinegar
  • 1/2 c
    water
  • 2 tsp
    sugar
  • 1 tsp
    dried oregano
  • 1 tsp
    dried tarragon
  • 1 tsp
    worcestershire sauce
  • 1/2 tsp
    salt
  • 1/4 tsp
    pepper

How to Make Marinated Asparagus Bundles

Step-by-Step

  1. Snap off tough ends of asparagus.
  2. Cover and cook in a small amount of boiling water 5 minutes or until crisp-tender.
  3. Drain and rinse under cold running water; drain well.
  4. Trim white portion from green onions, and reserve for another use.
  5. Place green onion tops in a bowl; add boiling water to cover.
  6. Drain immediately, and rinse under cold running water.
  7. Gather asparagus into 10 bundles, and add 2 bell pepper strips to each bundle.
  8. Tie each bundle with a green onion strip.
  9. Place bundles in a 13x9-inch baking dish.
  10. Combine chopped onion and next 9 ingredients (onion through pepper) in a bowl; stir well.
  11. Pour over asparagus bundles.
  12. Cover and chill 2 to 8 hours.
  13. To serve, remove asparagus bundles from marinade, and discard marinade.
  14. Arrange asparagus bundles on a serving platter.
