green onions
red bell peppers, cut into 20 strips
1 c
red wine vinegar, or balsamic vinegar
1/2 c
2 tsp
1 tsp
dried oregano
1 tsp
dried tarragon
1 tsp
worcestershire sauce
1/2 tsp
1/4 tsp

How to Make Marinated Asparagus Bundles


  • 1Snap off tough ends of asparagus.
  • 2Cover and cook in a small amount of boiling water 5 minutes or until crisp-tender.
  • 3Drain and rinse under cold running water; drain well.
  • 4Trim white portion from green onions, and reserve for another use.
  • 5Place green onion tops in a bowl; add boiling water to cover.
  • 6Drain immediately, and rinse under cold running water.
  • 7Gather asparagus into 10 bundles, and add 2 bell pepper strips to each bundle.
  • 8Tie each bundle with a green onion strip.
  • 9Place bundles in a 13x9-inch baking dish.
  • 10Combine chopped onion and next 9 ingredients (onion through pepper) in a bowl; stir well.
  • 11Pour over asparagus bundles.
  • 12Cover and chill 2 to 8 hours.
  • 13To serve, remove asparagus bundles from marinade, and discard marinade.
  • 14Arrange asparagus bundles on a serving platter.
