This is usually a side dish, but can be served as a main entree, just add Shrimp, Crawfish, fish, or chicken!

Ingredients

  • 3 c
    yellow corn
  • 3 c
    white shoepeg corn
  • 1 medium
    onion, chopped
  • 1/2
    bell pepper, chopped
  • 1
    stalk celery, chopped
  • 1
    green onion chopped
  • 1 Tbsp
    bacon drippings
  • ·
    cayenne pepper, salt, and black pepper to taste
  • ·
    *note* if topping with a meat of some sort, do not add the following*
  • 1 c
    either cubed beef, ham, or bacon
  • 1 can(s)
    diced tomatoes (you can use a small can, or a large can, it is up to you as per taste
  • 1 c
    heavy whipping cream

How to Make Maque Choux

Step-by-Step

  1. In a pot over med. heat, cook the onions and meat until they are brown. (if using seafood as a topper, just brown the onions in oil)
  2. add bell peppers, and celery, and saute them. Add tomatoes, and corn, saute 2 min. Add whipping cream, cover and let simmer on low heat for 30 min.
  3. Add green onions and seasonings, and let simmer, covered for another 10 min.
  4. Top with your favorite cooked, shrimp, crawfish, seafood, or chicken, or serve as a side dish
