This is usually a side dish, but can be served as a main entree, just add Shrimp, Crawfish, fish, or chicken!

3 c
yellow corn
3 c
white shoepeg corn
1 medium
onion, chopped
bell pepper, chopped
stalk celery, chopped
green onion chopped
1 Tbsp
bacon drippings
cayenne pepper, salt, and black pepper to taste
*note* if topping with a meat of some sort, do not add the following*
1 c
either cubed beef, ham, or bacon
1 can(s)
diced tomatoes (you can use a small can, or a large can, it is up to you as per taste
1 c
heavy whipping cream

How to Make Maque Choux


  • 1In a pot over med. heat, cook the onions and meat until they are brown. (if using seafood as a topper, just brown the onions in oil)
  • 2add bell peppers, and celery, and saute them. Add tomatoes, and corn, saute 2 min. Add whipping cream, cover and let simmer on low heat for 30 min.
  • 3Add green onions and seasonings, and let simmer, covered for another 10 min.
  • 4Top with your favorite cooked, shrimp, crawfish, seafood, or chicken, or serve as a side dish
