This is usually a side dish, but can be served as a main entree, just add Shrimp, Crawfish, fish, or chicken!

Ingredients

  • 3 cups yellow corn
  • 3 cups white shoepeg corn
  • 1 medium onion, chopped
  • 1/2 - bell pepper, chopped
  • 1 - stalk celery, chopped
  • 1 - green onion chopped
  • 1 tablespoon bacon drippings
  • - cayenne pepper, salt, and black pepper to taste
  • - *note* if topping with a meat of some sort, do not add the following*
  • 1 cup either cubed beef, ham, or bacon
  • 1 can diced tomatoes (you can use a small can, or a large can, it is up to you as per taste
  • 1 cup heavy whipping cream

How To Make maque choux

  • Step 1
    In a pot over med. heat, cook the onions and meat until they are brown. (if using seafood as a topper, just brown the onions in oil)
  • Step 2
    add bell peppers, and celery, and saute them. Add tomatoes, and corn, saute 2 min. Add whipping cream, cover and let simmer on low heat for 30 min.
  • Step 3
    Add green onions and seasonings, and let simmer, covered for another 10 min.
  • Step 4
    Top with your favorite cooked, shrimp, crawfish, seafood, or chicken, or serve as a side dish
