How to Make Mama's Fried Corn

Step-by-Step

  1. Put corn in a large cast iron skillet and cover with the water. Add sugar and bacon drippings. Add salt and pepper to taste.
  2. Cook on medium heat until most of the water has cooked down. This should take 15 to 20 minutes. If using fresh corn it will need to cook longer, probably 30 to 40 minutes.
  3. Mix flour with about 1/3 c. of water and add to the skillet stirring well until blended. Reduce heat to low and cook until corn is nice and thick. Stir frequently to prevent sticking.
