- 3 cups fresh or frozen silver queen white sweet corn
- 1 cup water
- 2 tablespoons bacon drippings
- 1 tablespoon flour, plus 1/3 cup water
- 2 tablespoons sugar or splenda
- - add salt and pepper to taste
How To Make mama's fried corn
-
Step 1Put corn in a large cast iron skillet and cover with the water. Add sugar and bacon drippings. Add salt and pepper to taste.
-
Step 2Cook on medium heat until most of the water has cooked down. This should take 15 to 20 minutes. If using fresh corn it will need to cook longer, probably 30 to 40 minutes.
-
Step 3Mix flour with about 1/3 c. of water and add to the skillet stirring well until blended. Reduce heat to low and cook until corn is nice and thick. Stir frequently to prevent sticking.
