makeover zucchini bread
Lightened my usual recipe by using less oil, sugar and eggs. Using some whole wheat flour does make the loaves a little more dense.

Makes 3 loaves with 8 to 10 slices
Ingredients
- 3 cups all-purpoe flour (can substitute 1 cup with whole wheat flour)
- 1/2 teaspoon baking soda
- 2 teaspoons baking powder
- 2 teaspoons cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon cloves
- 1/4 teaspoon salt
- 2 - eggs
- 1/3 cup canola oil
- 1/2 cup unsweetened applesauce
- 1 1/2 cups sugar
- 1 teaspoon vanilla
- 2 cups shredded zucchini
- 1/2 cup chopped nuts
- 1/2 cup raisins (soak in boiling water for 10 minutes to soften and then drain)
How To Make makeover zucchini bread

Step 1In a large bowl, combine the first 7 ingredients.

Step 2In another large bowl, beat the eggs until frothy. Add the oil, applesauce, sugar and vanilla. Beat until blended.

Step 3Stir into the dry ingredients until just moistened. (Will seem dry) Fold in the zucchini, raisins and nuts. (I used golden raisins for the color.)

Step 4Divide among three 8 x 4 loaf pans that have been sprayed with regular or baking PAM.

Step 5Bake at 350° for 40 - 50 minutes or until loaves test done. Cool for 10 minutes, remove from pans and cool completely on wire racks.
