Makeover Zucchini Bread

Lightened my usual recipe by using less oil, sugar and eggs. Using some whole wheat flour does make the loaves a little more dense.

3 c
all-purpoe flour (can substitute 1 cup with whole wheat flour)
1/2 tsp
baking soda
2 tsp
baking powder
2 tsp
1/2 tsp
1/4 tsp
1/4 tsp
1/3 c
canola oil
1/2 c
unsweetened applesauce
1 1/2 c
1 tsp
2 c
shredded zucchini
1/2 c
chopped nuts
1/2 c
raisins (soak in boiling water for 10 minutes to soften and then drain)

How to Make Makeover Zucchini Bread


  • 1In a large bowl, combine the first 7 ingredients.
  • 2In another large bowl, beat the eggs until frothy. Add the oil, applesauce, sugar and vanilla. Beat until blended.
  • 3Stir into the dry ingredients until just moistened. (Will seem dry) Fold in the zucchini, raisins and nuts. (I used golden raisins for the color.)
  • 4Divide among three 8 x 4 loaf pans that have been sprayed with regular or baking PAM.
  • 5Bake at 350° for 40 - 50 minutes or until loaves test done. Cool for 10 minutes, remove from pans and cool completely on wire racks.
