  • 8 oz
    pasta, bow-tie or ribbed
  • 3 Tbsp
  • 1 Tbsp
  • 1/2 c
    vegetable stock
  • 3/4 c
  • 1/2 c
    cheddar cheese, grated
  • 1/2 c
    parmesan cheese, grated
  • 1 Tbsp
    parsley, fresh and chopped
  • 1 tsp
  • 1/4 tsp
  • 1/4 tsp
  • 2 c
    broccoli florets
  • 1
    red bell pepper, chopped
  • 1 c
    mushrooms, sliced
  • 1
    green onion, sliced

How to Make Macaroni and Cheese with Vegetables


  1. Bring a large pot of water to boil; cook pasta until al dente.
  2. While pasta is cooking, in medium saucepan, melt 2 tablespoons of the butter.
  3. Remove from heat; add flour and stir until blended in.
  4. Whisk in stock and milk, stirring over medium heat until mixture comes to a boil and thickens; reduce heat to low.
  5. Stir in cheeses and seasonings; continue stirring until cheese is melted.
  6. Remove from heat and set aside.
  7. In a large skillet, melt remaining 1 tablespoon butter.
  8. Add remaining ingredients; cook vegetables, stirring constantly, for about 5 minutes, until tender/crisp, then reduce heat to low.
  9. When noodles are done, drain well.
  10. Toss with vegetables; stir in cheese sauce - Garnish with scallion curls.
