Ingredients
- 1 large cauliflower head, fresh, cut into florets
- 2 sticks butter
- 1 can diced tomatoes with garlic & onion, drained
- 1 teaspoon garlic powder
- - salt & pepper, to taste
- 16 ounces cheddar cheese, shredded
- 8 slices bacon, cooked crisp & crumbled
- 6 - scallions, diced (both greens & whites)
- 8 ounces sour cream, fat-free
- 1 env - ranch dressing mix, dry
- 2 tablespoons chives, dried
How To Make loaded cauliflower

Step 1In a large skillet, melt butter & then add cauliflower & cook over medium heat until tender, about 10 - 15 minutes.

Step 2In same skillet sprayed with cooking spray & set over medium high heat. Add in tomatoes & garlic. Saute until heated through, 3 minutes.

Step 3In a medium bowl, combine, cooled tomato mixture, sour cream, bacon, scallions, dry ranch dressing mix & chives. Set aside.

Step 4Divide cooked cauliflower among 4 serving bowls & season with salt & pepper.

Step 5Top each serving with 4 oz of the cheese & microwave for about 1 minute, or until the cheese is melted.

Step 6Now top each serving with 1/4 of the tomato mixture & serve immediately.
