Mmmmmmmmmmmmmmmmmmmm! A great alternative to a loaded baked potato.

Ingredients

  • 1 large cauliflower head, fresh, cut into florets
  • 2 sticks butter
  • 1 can diced tomatoes with garlic & onion, drained
  • 1 teaspoon garlic powder
  • - salt & pepper, to taste
  • 16 ounces cheddar cheese, shredded
  • 8 slices bacon, cooked crisp & crumbled
  • 6 - scallions, diced (both greens & whites)
  • 8 ounces sour cream, fat-free
  • 1 env - ranch dressing mix, dry
  • 2 tablespoons chives, dried

How To Make loaded cauliflower

  • Step 1
    In a large skillet, melt butter & then add cauliflower & cook over medium heat until tender, about 10 - 15 minutes.
  • Step 2
    In same skillet sprayed with cooking spray & set over medium high heat. Add in tomatoes & garlic. Saute until heated through, 3 minutes.
  • Step 3
    In a medium bowl, combine, cooled tomato mixture, sour cream, bacon, scallions, dry ranch dressing mix & chives. Set aside.
  • Step 4
    Divide cooked cauliflower among 4 serving bowls & season with salt & pepper.
  • Step 5
    Top each serving with 4 oz of the cheese & microwave for about 1 minute, or until the cheese is melted.
  • Step 6
    Now top each serving with 1/4 of the tomato mixture & serve immediately.
