Ingredients
- 4 - ears sweet corn, cooked
- 2 - eggs, beaten
- 1/4 cup milk
- 1/2 cup all purpose flour
- 1 teaspoon baking powder
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1 tablespoon bacon drippings or vegetable oil
- - butter or maple syrup (optional)
How To Make lisa's corn fritters

Step 1Cut kernels from corn and place in a medium mixing bowl; stir in eggs and milk. Combine flour, baking powder, sugar and salt in a small bowl; stir into corn mixture, and mix gently. Heat bacon drippings or vegetable oil in a skillet over medium-high heat. Drop batter by 1/4 cupfuls and cook until delicately browned, turning to brown the other side. Serve with butter and maple syrup, if desired. Makes one dozen.
