Great summertime dish that you can prepare in a cast iron pan on the grill - to keep the heat out of your kitchen. Frozen limas and corn are fine in this.

Ingredients
- 6 slices bacon
- 4 cups fresh corn kernels (6 ears)
- 2 cups baby lima beans
- 2 medium red bell peppers sliced or diced
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper
How To Make lima bean succotash

Step 1Fry bacon until crisp. Remove bacon and drain on paper towels. Do not toss bacon fat.

Step 2Cut the corn kernels from the cob and add to the hot bacon fat. Add the peppers, lima beans, salt and pepper. Stir fry over medium high heat until veggies are tender but still crunchy - about 8 minutes.

Step 3Top with crumbled bacon and serve immediately.
