One of my favorite batters for frying just about anything. Always light and crispy. Serve with warm marinara sauce. Yum!

Makes 1 1/4 cup
Ingredients
- 1/4 cup corn starch
- 1/2 cup flour
- 1/4 teaspoon season salt
- 1 teaspoon baking powder
- 1/8 teaspoon paprika
- 1/2 cup water plus 1 tablespoon
- 1 tablespoon vegetable oil
- Zucchini - washed, sliced 1/4 inch thick - pat dry
- Oil - for frying
How To Make ~ light crispy zucchini strips ~

Step 1Combine dry ingredients in a bowl and mix well. In another bowl, mix wet ingredients well. Add the wet mix to the dry and mix well. Dry zucchini well, dip and fry zucchini to desired crispiness. Sprinkle with salt while hot. I sometimes sprinkle with Parmesan too!
