Incorporating more raw vegetables into your diet is always a good idea and if you want a nice light meal that is easy to prepare, that is good for you and tastes delicious this would be the one I'd choose. It's not only nutritious but it's got a kick from the jalapeno pepper.

Ingredients

  • 2 - very ripe avocados
  • 3 - roma tomatoes, seeded and diced
  • 1/2 - jalapeno peppers
  • 2 tablespoons sweet onion, diced
  • 3 cloves fresh garlic, minced
  • 1/4 cup fresh cilantro, chopped
  • 1 - 10 oz. package froze corn, thawed
  • 2 teaspoons fresh lime juice
  • 6-8 - roamine lettuce leaves

How To Make lettuce wraps (raw food)

  • Step 1
    METHOD: In a medium bowl, mash the avocado.
  • Step 2
    Add remaining ingredients and stir until well mixed.
  • Step 3
    This is a very simple recipe and if you have kids, this would be a great recipe for them to help you with. You can add different ingredients to this if you like, the possibilities are endless. Enjoy!
