Incorporating more raw vegetables into your diet is always a good idea and if you want a nice light meal that is easy to prepare, that is good for you and tastes delicious this would be the one I'd choose. It's not only nutritious but it's got a kick from the jalapeno pepper.

Ingredients

  • 2
    very ripe avocados
  • 3
    roma tomatoes, seeded and diced
  • 1/2
    jalapeno peppers
  • 2 Tbsp
    sweet onion, diced
  • 3 clove
    fresh garlic, minced
  • 1/4 c
    fresh cilantro, chopped
  • 1
    10 oz. package froze corn, thawed
  • 2 tsp
    fresh lime juice
  • 6-8
    roamine lettuce leaves

How to Make LETTUCE WRAPS (RAW FOOD)

Step-by-Step

  1. METHOD:
    In a medium bowl, mash the avocado.
  2. Add remaining ingredients and stir until well mixed.
  3. This is a very simple recipe and if you have kids, this would be a great recipe for them to help you with. You can add different ingredients to this if you like, the possibilities are endless.
